SHAKSHOUKA SAUCE
This is a way to get the flavor of shakshouka on your eggs without making actual shakshouka.

Ingredients
4
ripe tomatoes
, chopped

medium
onion,
chopped
1
small
green bell pepper,
chopped
2
cloves garlic

T
tomato paste
1/2
t
hot or mild paprika
1/4
t
chili flakes or I T. diced fresh jalepeno
1/4
c. olive oil
1
t
ground cumin
fresh
bay leaves
salt and fresh ground pepper
Instructions
In a medium skillet, heat olive oil. Add onion, peppers, garlic, cumin, chili flakes, paprika and bay leaves and saute until soft. .
Add tomatoes and tomato paste book over high heat, stirring, until bubbly.
Turn down heat, cover and simmer 15-20 minutes.
Taste. Add salt and pepper to taste.
Spoon over eggs
