SHAKSHOUKA SAUCE

SHAKSHOUKA SAUCE

This is a way to get the flavor of shakshouka on your eggs without making actual shakshouka.

Ingredients
  

  • 4 ripe tomatoes , chopped
  • 1 medium onion, chopped
  • 1 small green bell pepper, chopped
  • 2 cloves garlic
  • 1 T  tomato paste
  • 1/2  t hot or mild paprika
  • 1/4 t chili flakes or I T. diced fresh jalepeno
  • 1/4  c. olive oil
  • 1 t  ground cumin
  • fresh bay leaves
  • salt and fresh ground pepper

Instructions
 

  • In a medium skillet, heat olive oil.  Add onion, peppers, garlic, cumin, chili flakes, paprika and bay leaves and saute until soft.  .
  • Add tomatoes and tomato paste book over high heat, stirring, until bubbly.
  •  Turn down heat, cover and simmer 15-20 minutes.  
  • Taste.  Add salt and pepper to taste.  
  • Spoon over eggs
