SHAKSHOUKA SAUCE
This is a way to get the flavor of shakshouka on your eggs without making actual shakshouka.

Ingredients
- 4 ripe tomatoes , chopped
- 1 medium onion, chopped
- 1 small green bell pepper, chopped
- 2 cloves garlic
- 1 T tomato paste
- 1/2 t hot or mild paprika
- 1/4 t chili flakes or I T. diced fresh jalepeno
- 1/4 c. olive oil
- 1 t ground cumin
- fresh bay leaves
- salt and fresh ground pepper
Instructions
- In a medium skillet, heat olive oil. Add onion, peppers, garlic, cumin, chili flakes, paprika and bay leaves and saute until soft. .
- Add tomatoes and tomato paste book over high heat, stirring, until bubbly.
- Turn down heat, cover and simmer 15-20 minutes.
- Taste. Add salt and pepper to taste.
- Spoon over eggs
